Ham ‘n Cheese Monster Melt

Ham 'n Cheese Monster Melt

3 lbs. potatoes (any kind), skins on, sliced 1/2 inch thick
1 stick butter, cut in small pieces
1 lb. good-quality ham, cut in strips or small chunks
1 lb. good-quality Swiss-type cheese, such as Emmenthaler (Gouda or Parrano work great too), shredded or finely chopped
1 cup milk
1/4 cup sherry
1/2 cup chopped green onions
1 T Dijon-style mustard
Salt and pepper to taste

Cook potatoes (bake, nuke, steam or simmer according to variety) until almost done. Scatter the butter pieces in a large baking pan, and top with half the potato slices. Sprinkle half the ham and half the cheese on top. Repeat with remaining potatoes, ham and cheese. Combine remaining ingredients and pour over all. Bake at 400 degrees Fahrenheit for 20 to 30 minutes, until everything melts together and a golden crust forms.
